I don't know about everyone else, but my ice cream maker is one of my most seldom-used appliances. I'm not sure why, since it's pretty hard to go wrong with ice cream.
24 oz vanilla soy yogurt
1 c sugar
3/4 c fresh lemon juice
1/4 c soy creamer
2 T lemon zest
1 c blueberries
- Whisk together all ingredients EXCEPT blueberries.
- Freeze according to your ice cream maker's instructions, stirring in blueberries towards the end of the freezing time.
- Serve immediately for soft-serve style frozen yogurt, or freeze in an airtight container for a firmer texture.
