Blueberry Gingerbread Pancakes with Lemon Syrup


Fat gingerbread pancakes studded with blueberries and drenched in sweet-tart lemon syrup...definitely worth getting out of bed for.

The Ingredients:
Pancakes:
1 1/2 c flour
1 1/2 t cornstarch
1 1/2 t baking powder
1/2 t salt
1/4 t baking soda
1 t ginger
1/2 t cinnamon
1/4 t cloves
1/4 t allspice
1 1/2 c almond milk
1/4 c molasses
3 T oil
1 c fresh blueberries, or 1 c frozen blueberries tossed with 1 T flour

Lemon Syrup:
3/4 c sugar
2/3 c water
1/4 c lemon juice
2 1/2 t lemon zest
2 t cornstarch, dissolved in 4 t water

The Process:
  1. To make lemon syrup, combine sugar, water, lemon juice, and lemon zest in a small saucepan.  Bring to a simmer over medium-low heat.  Whisk in cornstarch and continue to simmer for 2 minutes.  Cover and set aside until ready to serve.
  2. To make pancakes, combine dry ingredients in a mixing bowl.  In a separate bowl, vigorously whisk together wet ingredients until frothy.  Mix together wet and dry ingredients until just combined.  Fold in blueberries.
  3. Cook pancakes on a hot, oiled skillet or griddle, turning once when small bubbles form in the batter.  Serve with warm lemon syrup.

  1. Holy moly these look delicious! I'm not even a gingerbread fan and I'm drooling over them. Guess my love of pancakes will always win out ;)

    1. The lemon syrup would probably be good on regular blueberry pancakes for non-gingerbread fans.

  5. gingerbread pancakes! What a great idea! How did you come up with that? Must try. I bet they'd be yummy with cranberries too.

    1. Gingerbread with lemon sauce is a holiday tradition in my family, and I wanted to work it into my blueberry/lemon week somehow without just adding blueberries to the gingerbread loaf. Swapping in cranberries would probably be delicious, and I think they'd be good without berries, too.

    1. Yep, next week will be an apple-cinnamon fest, followed by a week of mint & chocolate, and a week of pineapple-coconut.
